Making Ganache Fillings

So after a pretty busy week last week, at NNC it is all go again…
Making lush ganache for fillings ummm. We have a white chocolate, a milk chocolate and a caramac one …. now I must repeat to myself… Do not eat them, do not eat them!!

Fruit Cake Mix

So I remembered to take a snap of the rich fruit cakes as I was mixing…. these cakes contain the best dried fruit I can buy and then soaked to plump those little sultanas , currents and Raisins upto soft succulent ones… we dont like dry gritty fruit here!! And only real butter goes in as well.

A generous helping of whole cherries also included 😉

Need a good strong arm to mix this up…. then into the oven for several hours before it gets lashings of spiced rum or brandy.

They then get to relax ( unlike cake makers in summer 😁) and get a slurp every week for a couple of months to mature…
